Fourth, the filtered juice was filtered through a 100-well/2.5-cm2 filter. The filtrate was placed in a closed container while 0.2% agar or gelatin was added and allowed to stand for 4-5 hours to further remove impurities, colloidal substances and other macromolecular polymers. The juice is then finely filtered through a 200-well/2.5-cm2 filter to further remove impurities.
5. In the refined cucumber juice, add 5% of white sugar, 0.5% of citric acid, 0.1% of CMC-Na, etc.; With a vacuum degasser degassing at 78KPa to prevent oxidation of color, aroma and nutrients. The degassed juice enters a high-pressure homogenizer to micronize the chlorophyll, aroma, and nutrient particles, and is evenly dispersed in the juice, so that the liquid juice system is more stable.
6. Sterilize the flash sterilizer at 86°C-94°C for 30 seconds. With citric acid, the pH of the juice is adjusted to about 6 as a cucumber juice beverage.
7. The sterilized juice can be aseptically filled with hot water. After the cans are quickly cooled to room temperature.
