1, cooking function:

The realization requires an external steam generator. The steam generator has three methods of electric heating, gas heating and gas heating. Natural gas heating, gas heating (the power of steam generator electric heating is 18KW, it is recommended to choose the other two heating methods), steaming is to directly pass steam into the smoker to achieve cooking function.

2, drying function:

Electric heating and drying: heating the electric heating tube, heating the tube to dissipate heat, the motor drives the axial fan to suck back the heat, and then pulls out the heat through the Liuzhou fan, and the heat passes through the deflector (small) or the draft tube ( Large) circulates throughout the furnace for drying.

Steam heating and drying: steam heats the copper coil (there is no meaning if there is no steam source copper coil). The copper coil heats up, the motor drives the axial fan to suck back the heat, and then the heat is pumped out through the Liuzhou fan. The flow plate (small) or the draft tube (large) is circulated throughout the furnace to effect drying (in the process of heating the copper coil to steam, the steam becomes condensed water, and the condensate is discharged through the trap).

3, smoked:

(1) Built-in smoke: Add the smoked material and sugar in a proper proportion, add the built-in cigarette case, set the appropriate smoke time and smoke temperature on the control panel, and heat the electric heating tube to smoke. The material is incompletely burned, and the axial flow motor drives the fan to forward and suck down, so that the volatile substances generated by the incomplete combustion of the smoked material are evenly dispersed in the furnace, and the food is smoked and colored.

(2) External cigarette: The smoking process is similar to the built-in cigarette, except that the external cigarette has the advantage of the smoke size and the smoke concentration can be freely controlled compared to the built-in cigarette, and the smoke enters the smoke through the action of the blower. After the passage, the filtration is carried out before being introduced into the furnace body, so that the content of the 3, 4-benzene-propylene ratio in the smoke is greatly reduced. When the salmon is cold-smoked, the temperature in the furnace is 0--30 °C under the driving of the compressor, and the smoking room is normally smoked.

Note: Smoked wood is generally more beech, birch, oak, apple tree, and some areas will also use rice bran, tea, etc., or use traditional Chinese medicine, dried tangerine peel and so on. The high content of pine, eucalyptus, and peach apricot resin produces black smoke; persimmon trees and mulberry trees produce odors, which are not suitable for use as smoked wood.

4, color:

The process of smoking is colored at the same time. I want to smoke it into pale yellow with wood chips and white sugar, and smoke it into brown with wood chips and brown sugar. The color depth can be determined according to the sugar content.
