Brief introduction

GR180 is a fungal α--amylase, which is produced by Aspergillus oryzae var fermentation action, via purification and refine. The enzyme can be not only used for gelatinization (liquidation) of starch, but for saccharity (produce malt syrup).

The amylase is called incision enzyme, which can hydrolyse α-1,4 glucoside bond of gelatinized starch, amylose, branch-chain starch solution, to produce soluble dextrin, meanwhile a small number of maltose and glucose. If proceed hydrolysis reaction use GR180 for long time, there will produce syrup containing high maltose and a bit glucose. The syrup have low-hygroscopicity, difficult to crystal and high level fermentability.starch molecular, reduce viscosity of gelatinized starch, to produce soluble dextrin and oligosaccharide.

Typical properties

Appearance amber to brown solution
Activity

≥29,000 u/ml

pH 5.5-6.5
proportion about 1.21g/ml

Enzyme activity unit definition: under specific analyze conditions, 1 g solid enzyme ( or 1 ml liquid enzyme) can liquify 1.0g definitive soluble starch substrate in one hour. Assay method is on the basis of QB 2526--2001.

Application

Effect of PH

Optimum PH range: 4.8-5.4

Effective PH range: 4.0-6.6

GR180 will be the most stable at PH6.0-8.0.

If the stability of enzyme is an important factor in operation, reaction should be done above PH 5.5, and below PH 5.5 if improved reaction rate.

Effect of temperature

GR180 can be effectively hydrolyse starch in a range of 45-55ºC with the optimum temperature of 50ºC. If the concentration of starch is too high, operating temperature can be increased to 65ºC. The optimum temperature will be changed at 45-65ºC affected by PH.

Dosage

Dosage is determined by technology conditions generally. Under normal conditions, reaction rate will be improved with the increase of enzyme concentration.

Dosage of GR180 is 0.01-0.05% of dry materials which can liquify and saccharify starch under optimized condition. Recommended dosage is 180-250ml/t ds.

Enzyme inactivation

  1. Increase temperature to 90-100ºC, and keep 5-10 minutes.
  2. Decrease PH value to below 4.0, adjust temperature and PH.

Enzyme inhibitor

  • Heavy metal ion can inhibit activity of GR180, particularly is copper and lead.
  • Zinc, nickel and ferric ion alsa can paly inhibiting effect in high concentration.

Packaging

The product is packed in 30kg food grade polyethylene drum. Large package also can be

provided.

Security & usage of enzyme

Avoid inhaling enzyme dust and enzyme fog. Please rinse with water more than 15 minutes if splash to hands or eyes carelessly..
